# Ingredients:

01 - 1/2 tsp baking soda.
02 - 1 tbsp red food coloring.
03 - 2 tbsp cocoa powder.
04 - 1 tsp vanilla extract.
05 - 1/2 cup buttermilk.
06 - 3 cups powdered sugar.
07 - 8 oz cream cheese, softened.
08 - 2 cups all-purpose flour.
09 - 1/4 tsp salt.
10 - 1 cup granulated sugar.
11 - 1 large egg.
12 - 1/2 cup unsalted butter, softened.
13 - 1 tsp vanilla extract (for filling).
14 - 1/2 cup unsalted butter, softened (for filling).

# Instructions:

01 - Turn your oven on to 350°F (175°C). Get two baking sheets ready with some parchment paper.
02 - Grab a bowl and sift together the cocoa powder, flour, salt, and baking soda.
03 - Mix the softened butter and sugar together in a big bowl until fluffy. Add the vanilla extract and egg, then stir well.
04 - Slowly add the dry ingredients and buttermilk into the butter mixture a little at a time. Toss in some red food coloring and mix until smooth.
05 - Scoop batter onto the parchment-lined baking sheets, leaving space between each dollop. Bake for 10-12 minutes, or until firm.
06 - To make the filling, whip the cream cheese, powdered sugar, softened butter, and vanilla extract until it's nice and creamy.
07 - When the cookies have cooled down, spread or pipe the creamy filling on one side, then top with a second cookie to make a sandwich.
