Essential Ingredients

  • White Cake Mix: The foundation for achieving that classic snack cake texture and flavor
  • Sour Cream: Adds richness and keeps the cake layers perfectly moist
  • Marshmallow Creme: Creates the signature fluffy, creamy filling
  • Almond Bark: Provides the ideal coating that sets with a satisfying snap

Creating Perfect Cake Layers

Room temperature ingredients are crucial for achieving smooth, evenly-textured cake layers. Cold ingredients lead to lumpy batter that won't bake properly.

Line baking sheets with perfectly smooth parchment paper - any wrinkles will show in the finished cake. Press the paper flat and smooth out any air bubbles.

Spread the batter in a thin, even layer. While it may seem too thin, this creates the perfect texture for stacking and filling the cakes.

Assembly Techniques

Freezing the assembled cakes before coating is essential. This step prevents crumbling and ensures the coating goes on smoothly with minimal mess. The frozen cakes are much easier to handle during the dipping process.

Mastering the Filling

The marshmallow cream filling requires precision. Beat until light and creamy, but avoid overwhipping which creates an overly airy texture. The goal is a smooth, dense consistency that mimics the original snack cakes.

Coating Tips

  • Set up a clean, organized dipping station
  • Use a double boiler to maintain proper coating temperature
  • Keep offset spatulas and dipping forks within easy reach
  • Have parchment-lined trays ready for finished cakes

Baking Memories

Making these Valentine cakes creates wonderful family traditions. Children can help cut out heart shapes and decorate, making the process even more special. Save the cake scraps for other treats like cake pops or trifles.

Coating Temperature Guide

The coating works best at exactly 90°F. Too warm creates thin, streaky coverage while too cool results in thick, uneven coating. Use a candy thermometer for precision and maintain the proper temperature throughout dipping.

Troubleshooting Guide

  • Lumpy coating indicates temperature is too low
  • Gently tap to remove excess coating
  • Remove air bubbles by tapping the bowl
  • Repurpose scraps into other desserts

Storage Instructions

Store finished cakes at cool room temperature, avoiding refrigeration which causes condensation. The flavors develop beautifully after 24 hours. They'll keep for up to a week when properly stored.

These homemade Valentine cakes bring pure joy to everyone who tries them. The combination of nostalgia and fresh-baked goodness makes them irresistible. They're perfect for parties, bake sales, or gifting to someone special.

Each lovingly crafted cake carries childhood memories while creating new ones. The effort of making them from scratch adds an extra layer of meaning to these cherished treats.

Even if the first batch isn't picture-perfect, the taste will transport everyone back to happy memories. The joy of sharing these homemade Valentine cakes makes it all worthwhile.

Ingredients

→ Cake

01 1 cup sour cream with full fat
02 3 large eggs, should be at room temp
03 1 box of basic white cake mix
04 1 teaspoon vanilla essence
05 2 tablespoons of veggie oil
06 1 cup of regular sugar
07 1/2 teaspoon of coarse salt
08 1 cup and one-third amount of water
09 1 cup plain white flour

→ Filling

10 3/4 cup salted butter
11 7 ounces of marshmallow spread
12 1/4 teaspoon kosher salt
13 1 and a half teaspoons of vanilla flavor
14 Up to 4 tablespoons of heavy cream
15 2 full cups of powdered sugar

→ Coating

16 32 ounces of almond bark
17 Pink food dye (gel type)
18 3 tablespoons of Crisco shortening

Instructions

Step 01

Blend all the cake ingredients until the batter is nice and smooth. Pour evenly into sheet pans lined with parchment paper. Bake at 350°F for 15 to 18 minutes, then let it cool and set it in the fridge.

Step 02

Whip the marshmallow spread together with the butter. Slowly mix in your powdered sugar, vanilla, salt, and cream until it reaches that perfect spreadable texture.

Step 03

Cut out 32 shapes (hearts) from the baked cake layers. Pair them up, add the filling between two, and press gently to make sandwiches. Pop them in the freezer for an hour.

Step 04

Melt the almond bark and blend in the Crisco shortening. Keep a bit of the white coating aside. Use the rest to make the pink color by adding the food dye, then let it cool off slightly.

Step 05

Take the frozen cakes, dip them into the pink coating, and let them set for about 10 minutes. Drizzle the white coating on top to finish them off.

Notes

  1. Only use gel-based food color!
  2. Keep cakes frozen before dipping them in coating
  3. Thin cakes are what we’re going for here
