I've turned the classic elotes into a smooth, hearty soup you'll love. After plenty of trial runs, I found just the right mix of sweet corn, smoky poblanos, and warm spices that brings street vendor flavors straight to your dinner table.

Total Indulgence

If you go crazy for elotes, you'll fall for this soup. It hits all the notes - smooth, fiery, and zesty - while keeping things super easy to make.

What You'll Need

Kick things off with flavor builders, poblanos add smokiness, while in-season corn provides sweetness. Good stock and potatoes make it substantial, and the cream with cotija cheese creates that velvety feel. A squeeze of lime and some fresh cilantro really wake everything up.

Making It Happen

Cook your veggies down, throw in your seasonings, and build those tasty layers. Let potatoes simmer till soft, mix in your corn and cream. Whizz up some of it for that perfect consistency, then finish with cheese, a lime splash, and cilantro sprinkles.

Top It Off

Drizzle with crema, sprinkle crispy tortilla bits, add some jalapeños, extra cotija, and fresh herbs. Every topping brings new flavor, crunch, and wow factor.

Nailing It

Go for fresh corn when you can, tweak the heat to your liking, blend till smooth. These little touches work wonders.

Storage Tips

It'll stay tasty in your fridge for five days or frozen for up to three months. Just warm it slowly, adding a splash of liquid if it's too thick.

Change It Up

Crank up the spice, swap in sweet potatoes, skip the meat products, or toss in some protein. Each twist brings something new to love.

The mix of smooth, spicy and sweet hits just right. All those different textures and flavors make every bite something to look forward to.

Drink Pairings

Smooth white wines really go well with the spices and textures in this dish. Nothing fancy needed to boost your meal.

Presentation Ideas

Dish it up in earthy bowls, top with colorful garnishes, grab some crusty bread. These small touches turn everyday soup into something special.

Feed The Masses

Works great for dinner parties or quick family meals. Everyone gathers around this soup thanks to its bold taste and comforting creaminess that leaves folks asking for seconds.

Summary

This cozy dish transforms the bold flavors of street corn into a creamy, savory soup. It's a great choice for cool nights or group dinners.

Recipe FAQs

→ Can I use fresh corn?

Absolutely! Use about 6 cups of fresh corn instead of frozen. Either option works perfectly.

→ What’s a good cotija substitute?

Feta cheese is a great alternative. Its salty, crumbly texture is super similar to cotija.

→ Could this be vegetarian?

It sure can! Swap the chicken broth for veggie broth. Everything else is already vegetarian-friendly.

→ How spicy does it get?

It’s pretty mild, thanks to the poblanos and chile powder. Add some fresh chiles or extra chile powder to make it spicier.

→ Why leave some soup unblended?

It adds texture! Blended portions create a smooth base, while the whole veggies and corn give it some bite.
