Set your oven to 400°F to preheat.

Grab a nonstick skillet and heat it over medium. Cook the sausage, breaking it into crumbles, until it's no longer pink—should take about 5 minutes. Let it rest for 10 minutes to cool down.

In a big bowl, toss in the cooled sausage, the eggs, and the melted butter. Beat the mix really well until the eggs are blended.

Now add the flour and baking powder into the same bowl. Stir everything together until you don’t see any dry spots of flour left.

Gently mix in the shredded cheddar and the chopped green chilis. Stir just enough to spread them evenly through the batter.

Scoop out the batter into 12 big portions, using either a cookie scoop or a large spoon, and lay them on a baking sheet. Bake them for about 10 minutes, until the centers are set.
