Egg Bites with Sausage (Print Version)

# Ingredients:

01 - 1 pound of breakfast sausage, ground
02 - 6 eggs, large size
03 - 2 tablespoons of melted salted butter
04 - 1 3/4 cups of regular all-purpose flour
05 - 2 teaspoons of plain baking powder
06 - 1 small can (7 ounces) of chopped green chilis
07 - 1 1/2 cups of sharp cheddar cheese, shredded

# Instructions:

01 - Set your oven to 400°F to preheat.
02 - Grab a nonstick skillet and heat it over medium. Cook the sausage, breaking it into crumbles, until it's no longer pink—should take about 5 minutes. Let it rest for 10 minutes to cool down.
03 - In a big bowl, toss in the cooled sausage, the eggs, and the melted butter. Beat the mix really well until the eggs are blended.
04 - Now add the flour and baking powder into the same bowl. Stir everything together until you don’t see any dry spots of flour left.
05 - Gently mix in the shredded cheddar and the chopped green chilis. Stir just enough to spread them evenly through the batter.
06 - Scoop out the batter into 12 big portions, using either a cookie scoop or a large spoon, and lay them on a baking sheet. Bake them for about 10 minutes, until the centers are set.

# Notes:

01 - Keep leftovers in the fridge for up to four days.
02 - The green chilis are optional, so leave them out if you’d prefer.
03 - Make sure not to overbake or the bites will turn out dry.
