Ingredients

01 7 grams (2 1/3 teaspoons) of gelatin powder
02 3 tablespoons of chilled water
03 10 ounces (about 2 1/2 cups) of raspberries, fresh or frozen
04 Half a cup of white sugar
05 Juice from 2 tablespoons of fresh lemons

→ Cream Layer

06 2 cups of thick cream for whipping
07 1/4 cup of powdered sugar

08 8 to 12 whole raspberries for decoration
09 Extra whipped cream for topping

Instructions

Step 01

Sprinkle the gelatin on top of the cold water in a small dish. Leave to sit for 5-10 minutes.

Step 02

Combine raspberries, sugar, and lemon juice in a medium pot over low heat. Stir until the sugar is all dissolved. Strain the mix to get rid of the seeds, then stir in the prepared gelatin and heat gently until dissolved.

Step 03

Using an electric mixer, beat the heavy cream and powdered sugar until soft peaks form. Increase the speed to get stiff peaks.

Step 04

Take about 1/4 of the whipped cream and stir it into the chilled raspberry mixture. Gradually fold in the rest of the whipped cream until smooth and even.

Spoon the mixture evenly into serving cups. Pop them in the fridge for at least 2 hours to firm up.
