Upside Pineapple Pancakes (Print Version)

# Ingredients:

01 - 1 cup milk, any type you prefer.
02 - 2 cups Bisquick or similar pancake mix.
03 - 2 large eggs.
04 - About 20 ounces of pineapple rings.
05 - 8-10 bright red maraschino cherries.
06 - 1/4 cup of brown sugar.
07 - Butter or non-stick spray for the pan.
08 - Optional whipped cream topping.
09 - Warm maple syrup for drizzling when serving.

# Instructions:

01 - Warm the skillet on medium-low heat. Make sure you drain and pat the pineapple dry.
02 - Combine the Bisquick, milk, and eggs with a whisk until smooth.
03 - Scoop a 1/4 cup of the batter onto the pan, let it cook for 2 minutes, then place a pineapple ring and cherry on top. Sprinkle some sugar over it.
04 - Flip the pancake carefully and cook the other side for another 2 to 3 minutes.

# Notes:

01 - Make sure your pineapple slices are really dry.
02 - Don’t let the batter get overly thick.
