01 -
Set your oven to 350°F (175°C) and prepare a 9x9 inch baking pan with a light coat of grease.
02 -
Combine the crushed graham crackers with the melted butter and sugar in a bowl. Stir until everything looks nicely coated.
03 -
Firmly press your mixture into the prepared pan to create the base. Pop it in the oven for 8 to 10 minutes, then let it cool down.
04 -
Using a large mixing bowl, beat together the cream cheese and sugar until smooth and fluffy.
05 -
Crack in the eggs one at a time, making sure to mix well after each. Add the vanilla and stir everything together.
06 -
Carefully fold in the sliced peaches so they stay intact.
07 -
Pour your cream cheese mix over the cooled crust base and spread it out evenly with a spatula.
08 -
Bake for 30 to 35 minutes. The center should jiggle slightly while the edges are firm.
09 -
Take the pan out and let it cool down fully. Once cooled, refrigerate it for at least 4 hours or until the texture is set.
10 -
Cut into bars once firm and top with extra peach slices and whipped cream, if you'd like.
