Fill a big pot with water, add some salt, and bring it to a fast boil. Cook the rigatoni as the package says, then drain it and put it aside.

Sprinkle beef pieces with pepper and salt. Heat olive oil in a large pan over medium to high heat, then cook the beef till it’s browned on all sides (about 5-6 mins). Take it out of the pan once done.

Toss the diced onion and minced garlic into the same pan. Cook them for 3-4 mins, stirring, until they soften and smell amazing.

Pour in beef stock and mix well, scraping the pan to grab all those tasty bits. Stir in cream, Parmesan, and the Italian seasoning. Let it simmer about 5 mins, so the sauce thickens a bit.

Add the beef back into the skillet, toss in the cooked rigatoni, and stir to coat everything with the sauce. Let it simmer 2-3 more mins to blend the flavors.

Top your dish with fresh parsley and extra Parmesan if you'd like. Serve while warm and enjoy.
