Parmesan Beef Rigatoni (Print Version)

# Ingredients:

01 - 1 lb stew meat or sirloin, chopped into smaller chunks.
02 - 12 oz of rigatoni noodles.
03 - A pinch of salt and black pepper, to season.
04 - 2 tablespoons of olive oil.
05 - 1 small onion, finely chopped.
06 - 3 minced garlic cloves.
07 - 1 cup of beef stock.
08 - 1/2 cup Parmesan cheese, grated.
09 - 1 tsp of dried Italian herbs.
10 - 1 cup of heavy whipping cream.
11 - Freshly chopped parsley for topping.

# Instructions:

01 - Fill a big pot with water, add some salt, and bring it to a fast boil. Cook the rigatoni as the package says, then drain it and put it aside.
02 - Sprinkle beef pieces with pepper and salt. Heat olive oil in a large pan over medium to high heat, then cook the beef till it’s browned on all sides (about 5-6 mins). Take it out of the pan once done.
03 - Toss the diced onion and minced garlic into the same pan. Cook them for 3-4 mins, stirring, until they soften and smell amazing.
04 - Pour in beef stock and mix well, scraping the pan to grab all those tasty bits. Stir in cream, Parmesan, and the Italian seasoning. Let it simmer about 5 mins, so the sauce thickens a bit.
05 - Add the beef back into the skillet, toss in the cooked rigatoni, and stir to coat everything with the sauce. Let it simmer 2-3 more mins to blend the flavors.
06 - Top your dish with fresh parsley and extra Parmesan if you'd like. Serve while warm and enjoy.
