Healthy Oatmeal Cookies (Print Version)

# Ingredients:

01 - 3/4 cup whole wheat flour.
02 - 1/2 cup honey.
03 - 1 cup quick oats.
04 - 1 large egg.
05 - 2 tbsp butter, melted and cooled.
06 - 1/2 tsp kosher salt.
07 - 1 1/2 tsp ground cinnamon.
08 - 1 tsp vanilla extract.
09 - 1 1/2 tsp baking powder.
10 - 1/2 to 3/4 cup dark chocolate chips, divided.

# Instructions:

01 - Set the oven to 325°F and line a baking sheet with parchment paper.
02 - Grab a bowl and stir together the oats, flour, salt, cinnamon, and baking powder.
03 - In a smaller bowl, whisk the egg with the melted butter, honey, and vanilla until smooth.
04 - Pour the dry stuff into the wet mix, stir gently, and fold in half the chocolate chips.
05 - Pop the dough in the fridge for 30 minutes to firm it up.
06 - Scoop out 12 to 15 portions, shape them into cookies, and place them on the baking sheet.
07 - Bake for about 12 minutes, then press the rest of the chocolate chips on the cookies while they’re still warm.
08 - Let them cool completely before munching on them.
