Peanut Butter Oat Bites (Print Version)

# Ingredients:

01 - 1/4 cup dark chocolate chips (optional for drizzling)
02 - 1 cup of rolled oats
03 - 1/4 cup honey or maple syrup
04 - 1/2 teaspoon vanilla extract (optional)
05 - A pinch of salt (only if your peanut butter isn’t salted)
06 - 1/2 cup of natural peanut butter

# Instructions:

01 - In a bowl, toss together the oats, peanut butter, honey (or syrup), vanilla extract, and a tiny bit of salt. Mix everything until it’s sticky and combined.
02 - Scoop the mix into a mini muffin tray. Press down firmly to shape small cups. Using liners or a silicone tray makes getting them out super easy.
03 - In a microwave-safe bowl, melt the chocolate chips. Do it in short bursts of 15 seconds, stirring after each time. Either drizzle or smear it on top of the cups.
04 - Pop the tray in the fridge for at least an hour until the cups feel solid. Then take them out and enjoy.

# Notes:

01 - Keep these in the fridge for up to a week, or freeze them to enjoy later.
02 - You can swap peanut butter for almond or cashew butter if that’s more your thing.
03 - If you like, toss in coconut flakes, seeds, or even some nuts to mix things up.
