In a bowl, toss together the oats, peanut butter, honey (or syrup), vanilla extract, and a tiny bit of salt. Mix everything until it’s sticky and combined.

Scoop the mix into a mini muffin tray. Press down firmly to shape small cups. Using liners or a silicone tray makes getting them out super easy.

In a microwave-safe bowl, melt the chocolate chips. Do it in short bursts of 15 seconds, stirring after each time. Either drizzle or smear it on top of the cups.

Pop the tray in the fridge for at least an hour until the cups feel solid. Then take them out and enjoy.
