Rinse apples well and wipe them completely dry. Push a wooden stick or skewer straight in at the apple’s top for a good grip.

Put sugar, corn syrup, and water into a pot. Heat on medium while stirring until the sugar is dissolved.

Let the mix come to a boil. Stop stirring and let it cook until it hits 300°F (150°C). Check the temperature using a candy thermometer.

Take the pot off the heat and mix in the food coloring along with vanilla.

Carefully roll each apple in the candy coating, turning the apple to cover it evenly. Let any extra drip back into the pot.

Place the coated apples on a sheet of parchment paper. Leave them alone for roughly 30 minutes to cool and harden.

If you'd like toppings, sprinkle nuts or sprinkles over the apples before the candy layer sets fully.
