In a big bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let it sit untouched for 5-10 minutes until the mixture gets bubbly.

Add in the rest of the sugar, eggs, cooled melted butter, salt, and nutmeg. Gradually work the flour in until the dough is sticky but workable. Knead it on a surface dusted with flour for about 5-7 minutes till the dough feels soft and smooth.

Coat a bowl lightly with grease, place the dough inside, and cover it with a moist towel. Leave it somewhere warm for 1 to 1.5 hours, until the dough has doubled.

Flatten the dough to about 1/2-inch thickness on a floured countertop. Use a doughnut cutter to make the rings and the centers.

Arrange the doughnut shapes on a parchment-lined sheet, letting them rise again for around 30 minutes until they're puffed up and soft.

Heat oil to 350°F (175°C) in a deep skillet. Fry a few doughnuts at a time, about 1 minute per side, until they're golden brown. Move them to a rack to drain.

Stir the powdered sugar, 1/3 cup milk, and vanilla together in a bowl to make a glaze. Dip each fried doughnut while they're still warm, then let the glaze harden on a rack.
