Authentic Hong Kong Sweet and Sour Chicken

A perfectly balanced sweet and sour chicken starts with a shatteringly crisp coating and a sauce that hits all the right notes. After extensive testing and refinement, this recipe delivers that ideal combination of crunch, tang, and glaze that makes this takeout favorite truly shine at home.

The true test came when this dish earned praise from a Hong Kong-born chef, who specifically noted the well-balanced sauce that avoids the cloying sweetness found in many versions.

Key Ingredients

Chicken Thighs: Choose boneless, skinless for the juiciest results

Rice Vinegar: Provides clean acidity and subtle sweetness

Fresh Pineapple: Select ripe fruit for natural sweetness and tang

Mixed Peppers: A combination adds color and flavor variety

Cornstarch: Creates the signature crispy exterior

Achieving Perfect Texture

Begin by marinating the chicken in egg white and soy sauce for tenderness. Meanwhile, prepare the sauce by combining ketchup, vinegar, brown sugar, and soy sauce, adjusting until balanced. For the coating, thoroughly dredge each piece in seasoned cornstarch mixed with garlic powder, ginger, and white pepper.

Frying Method

Heat oil until it sizzles with a test piece of coating. Fry in small batches to maintain proper temperature and even cooking. Remove when golden and drain well.

Building Flavor

Sauté onions until caramelized for depth. Add peppers and cook until edges char slightly while maintaining crispness. Finish with pineapple just until heated through.

Final Assembly

Reduce sauce until glossy and thickened. Return chicken to pan and toss quickly to coat while maintaining crispiness.

Presentation

Serve over steamed jasmine rice, arranging chicken and vegetables artfully. Pour additional sauce around the plate and garnish with sesame seeds and scallions.

Storage

Store components separately. Reheat chicken in oven until crisp before combining with warmed sauce mixture.

Ingredients

→ Chicken Marinade

01 1 egg white
02 1 tbsp soy sauce
03 350g chicken thighs, cut into small chunks

→ Sauce

04 4 tbsp apple cider vinegar
05 50g granulated sugar
06 75g of ketchup
07 1 tbsp soy sauce
08 1 tsp cornflour or cornstarch

→ Coating

09 70g of cornstarch or cornflour
10 ¼ tsp white pepper
11 ½ tsp powdered ginger
12 ½ tsp garlic powder
13 1 tsp table salt

→ Vegetables

14 ½ of a red onion, thinly sliced
15 2 bell peppers, cut into chunks
16 250g pineapple, diced into small pieces
17 4-5 tbsp of cooking oil (sunflower or vegetable)

Instructions

Step 01

Whip up the egg white with soy sauce, toss it over the chicken chunks, and let it soak in the flavors while you get other things ready.

Step 02

Stir all the sauce stuff together in one bowl. In another bowl, blend all the coating ingredients.

Step 03

Take the chicken out of the marinade, shake off anything extra, and roll each piece in the seasoned cornstarch mix.

Step 04

Drop the coated chicken into hot oil and fry it until it’s nice and crispy golden. Pull it out and keep it off to the side.

Step 05

Flash-fry the onion and peppers until they start to soften. Throw in the pineapple and heat it through.

Step 06

Pour the sauce into the pan and heat it till it bubbles—just 30-60 seconds. Put the chicken back in the pan, give it a stir, and then serve it up!

Notes

  1. You might need to fry the chicken in a couple of rounds.
  2. Double-check the chicken is totally cooked before serving.
  3. For the crunchiest results, eat it right after cooking.
