Hearty Beef Soup (Print Version)

# Ingredients:

01 - 1 teaspoon smoked paprika.
02 - 2 teaspoons chili powder.
03 - 2 tablespoons olive oil.
04 - 4 cloves garlic, minced.
05 - 1 medium yellow onion, diced.
06 - 3 stalks celery, diced.
07 - Salt, pepper, and red pepper flakes, to your liking.
08 - 4 medium Yukon gold potatoes, chopped into bite-size chunks (about 1 lb).
09 - 4-6 cups beef broth.
10 - 1 (15-ounce) can corn, drained.
11 - 1 teaspoon Italian seasoning.
12 - 3 tablespoons tomato paste.
13 - 2 lbs ground beef.
14 - 1 (14.5-ounce) can green beans, liquid removed.
15 - 1 (14.5-ounce) can diced tomatoes with liquid included.
16 - 4 carrots, sliced into small circles.
17 - 1 (15-ounce) can black-eyed peas, rinsed and drained.

# Instructions:

01 - Drizzle olive oil into a big Dutch oven and warm it over medium-high heat. Toss in the onion and celery, cooking for 2-3 minutes till soft. Add the crushed garlic and let it cook an extra minute or so until it smells great.
02 - Drop in the ground beef and keep stirring to break it apart. Cook till all the pink is gone.
03 - Add the potatoes, carrots, green beans, canned tomatoes (along with the juices), black-eyed peas, corn, a few dollops of tomato paste, and the seasonings. Pour in 4 cups of broth, adding more broth later if it feels too thick.
04 - Turn up the heat until it starts boiling, then lower it to medium-low. Pop on a lid and let it simmer for 14-16 minutes or until the potatoes are soft.
05 - Try a spoonful of the soup and sprinkle in salt, pepper, or a pinch of red pepper flakes to suit your taste buds.
06 - Scoop the soup into bowls and add toppings like shredded cheese or crumbled tortilla chips if you want. Enjoy while it’s warm.
