Fudgy Bean Treats (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 (15-ounce) can of black beans, drained and washed (425g)
02 - 3 eggs, large
03 - 3 tablespoons neutral oil (vegetable or canola)
04 - 1 teaspoon pure vanilla extract

→ Dry Ingredients

05 - ¼ cup cocoa powder, unsweetened (30g)
06 - ⅔ cup granulated sugar (120g)
07 - ½ teaspoon baking powder
08 - ¼ teaspoon salt
09 - ½ teaspoon instant coffee or finely ground coffee (optional)

→ Add-ins

10 - ½ cup semi-sweet chocolate chips (60g)

# Instructions:

01 - Set your oven to 350°F (176°C) beforehand. Blend black beans in a food processor until it turns to paste. Combine beans, eggs, oil, and vanilla in a big bowl.
02 - Mix cocoa powder, sugar, baking powder, salt, and coffee (if using) in a different bowl. Add this mix to the wet stuff, then toss the chocolate chips in too.
03 - Grease an 8x8 or 9x9 inch tray and line it with parchment paper. Pour the batter in and bake for around 30–40 minutes until the sides look done and the middle is mostly firm.
04 - Wait for the brownies to fully cool down before slicing them up.

01 - Double the recipe for thicker brownies
02 - Store in the fridge for up to a week
03 - Freezes well for as long as 3 months
