Crockpot Chili Chicken (Print)

Rich and flavorful crockpot chili with chicken, bacon, beans, corn, and ranch seasoning in a creamy base.

# Ingredients:

01 - 3 medium chicken breasts.
02 - 2 1/2 cups chicken stock.
03 - 15.25 ounce can black beans, rinsed and drained.
04 - 15.25 ounce can southwest-style corn with peppers, liquid included.
05 - 10 ounce can Rotel tomatoes with chilies, undrained.
06 - 8 ounces cream cheese, cut into pieces.
07 - 1 ounce packet of ranch dry seasoning.
08 - 1 tablespoon chili powder.
09 - 1 tablespoon onion powder.
10 - 1 teaspoon coarse salt.
11 - 1 teaspoon ground black pepper.
12 - 1 1/4 cups crispy crumbled bacon.
13 - 2 cups shredded Colby-jack cheese.
14 - 1 1/2 tablespoons chopped cilantro for topping.

# Steps:

01 - Use a liner or spray the crockpot with non-stick spray.
02 - Stir together stock, corn, tomatoes, ranch powder, and all spices.
03 - Put chicken at the bottom, then beans, your broth mix, bacon, and cubed cream cheese.
04 - Turn on high for 4 hours or keep it on low for 6 hours.
05 - Take out chicken to shred it and mix cream cheese into the sauce to melt.
06 - Add the shredded chicken and cheese back in, stir well, and sprinkle with cilantro.

01 - Keep the liquid in the corn and tomato cans.
02 - Cooking works on high or low heat.
