Set your oven to 350°F (175°C). Put parchment paper on a baking tray and add a light oil spray to it.

Using a strainer or cheesecloth, squeeze out extra liquid so the chips turn out crispier.

Scoop little piles of cottage cheese onto the baking sheet. Press them flat with a spoon to create thin disks, leaving a bit of space in between.

Pop into the oven for 20-25 minutes, or until they're golden and crispy. Keep an eye on them so they don't burn.

Let the chips cool on the tray for a few minutes to firm up. Once they're ready, move them to a serving dish.

As an alternate method, spread dry cottage cheese on parchment paper and microwave at full power for 2-3 minutes or until crispy and golden. Cool and then break into pieces.
