In a small bowl, mix the powdered sugar with plant-based milk or water, adding the liquid a little at a time. Stir until smooth and thick with a drippy consistency. Set aside.

In a small bowl, combine the flour, baking powder, and salt.

Stir in enough water (approximately 4 tablespoons) to create a slightly tacky but not sticky dough. Use your hands to knead it into a ball. Do not overwork the dough.

Dust a clean surface with flour and roll the dough into a long strip about 4 inches wide and ⅛ inch thick.

Sprinkle the cinnamon and sugar evenly over the dough. Fold the longest sides inward to meet in the center, sealing in the filling.

Carefully roll the dough tightly and place it gently in the greased mug. Pour ½ teaspoon of water over the top.

Microwave uncovered at full power for about 50 seconds (1200-watt microwave). Adjust the time if using a microwave with a different wattage but do not exceed 1 minute 10 seconds. It is better to undercook slightly, then microwave in 5-second increments if needed. The roll will puff and should reach near the top of the mug.

Insert a toothpick into the roll to check doneness—it should come out clean. Remember that microwaved food continues to cook after removal. Avoid overcooking.

Spoon the icing over the roll directly in the mug or turn it out onto a plate before icing. If removing from the mug, run a knife around the edges first. Serve immediately while warm.
