Cinnamon Cheesecake Bars (Print)

Soft cheesecake bars with a crispy cinnamon-sugar twist inspired by churros.

# Ingredients:

01 - 8 oz cream cheese, softened.
02 - 1 tsp ground cinnamon.
03 - ½ cup sugar.
04 - 2 eggs, room temperature.
05 - 1 cup finely crushed graham crackers.
06 - ¼ cup sugar, for topping.
07 - 4 tablespoons butter, melted.
08 - 1 tsp vanilla extract.
09 - ¼ cup sugar, mixed with cinnamon.

# Steps:

01 - Set your oven to 350°F (175°C). Blend graham cracker crumbs, melted butter, cinnamon, and sugar in a bowl. Push this into a baking pan to form a firm base.
02 - Whisk softened cream cheese and sugar together until creamy. Pour in eggs and a splash of vanilla extract, then stir till smooth. Spread the mixture on the crust you made.
03 - Mix cinnamon and sugar in a separate bowl. Coat the cheesecake layer evenly with this blend.
04 - Put the pan in the oven and bake for 25–30 minutes, or until it's firm. Let it cool to room temperature, then chill it in the fridge for 2 hours or more.
05 - Cut the chilled dessert into squares and dig in! Enjoy the crunchy, sweet top with each creamy bite.
