Soft Sugar Cookies (Print)

Buttery, chewy sugar cookies with a hint of vanilla. Quick to make and no need to chill the dough.

# Ingredients:

01 - 2 1/2 cups of plain flour, measured and leveled properly.
02 - 1/2 teaspoon of baking soda.
03 - 1/2 teaspoon of salt.
04 - 1/2 teaspoon of baking powder.
05 - 3/4 cup cool, softened unsalted butter.
06 - 1 1/4 cups sugar, plus another 1/4 cup for coating.
07 - 1 big egg.
08 - 1 additional egg yolk.
09 - 2 teaspoons real vanilla extract.

# Steps:

01 - Set your oven to 350°F. Get some baking sheets ready by lining them with parchment paper.
02 - Stir the flour, salt, baking soda, and baking powder together until they're evenly mixed.
03 - Whip the butter and sugar together for around 2 minutes until it's fluffy and pale. Add the egg, yolk, and vanilla, and mix it in well.
04 - Gradually add the dry mix to the wet mix. Keep your mixer on low and stop when they're just barely blended.
05 - Form the dough into 1-inch balls. If you'd like, roll the balls in sugar. Space them around 3 inches apart on the baking sheets.
06 - Cook one tray at a time for 8-9 minutes until the tops look just barely set. Be careful not to overcook them.

# Notes:

01 - These can be kept fresh for five days if stored in an airtight container at room temperature.
02 - Freeze for up to 3 months and enjoy later!
03 - No need to chill the dough before baking.
