Lasagna Soup (Print Version)

# Ingredients:

01 - 1 lb of ground beef.
02 - 1 big onion, chopped small.
03 - 4 garlic cloves, finely chopped.
04 - 1-2 tablespoons of olive oil.
05 - 1 can of diced tomatoes (15 oz).
06 - 1 can of tomato sauce (15 oz).
07 - 1/4 cup or 3 oz of tomato paste.
08 - Around 1-2 cups of water, if needed.
09 - 4 cups chicken stock.
10 - 1 tsp of salt.
11 - A pinch of black pepper to taste.
12 - 1 tbsp Italian herbs mix.
13 - 8 oz uncooked bowtie pasta.
14 - For topping: 1/2 cup ricotta cheese, 1/2 cup mozzarella (shredded), 1/4 cup grated Parmesan, and a bit of fresh parsley (chopped).

# Instructions:

01 - In a large soup pot, warm up the olive oil on medium. Toss in the ground beef, onion, and garlic. Cook until the meat turns brown and the onions are soft.
02 - Combine your tomatoes (and juices), tomato sauce, chicken broth, Italian spices, salt, and pepper into the pot.
03 - Turn up the heat and let it boil. Mix in the raw pasta, then lower the heat to let it simmer. Stir from time to time and cook for about 10-15 minutes, or until pasta is done.
04 - When serving, top each bowl of soup with some ricotta cheese, grated Parmesan, shredded mozzarella, and a sprinkle of parsley.

# Notes:

01 - Skip some water or let it simmer longer if you like it thicker.
02 - Switch out the beef for ground turkey if you want it lighter.
03 - Pair it with garlic bread or crunchy bread for a full meal.
