# Ingredients:

01 - 1/4 cup powdered sugar.
02 - 1/2 cup diced fresh strawberries.
03 - 8 oz softened cream cheese.
04 - 1 tsp vanilla extract.
05 - 4 large eggs.
06 - 1/2 cup milk.
07 - 1 tsp vanilla extract.
08 - 8 brioche or challah bread slices.
09 - Oil or butter for cooking.
10 - A handful of fresh strawberries, chopped.
11 - Dusting of powdered sugar, optional.
12 - Maple syrup for topping.

# Instructions:

01 - Mix together the powdered sugar, vanilla, and softened cream cheese in a bowl until creamy. Carefully stir in chopped strawberries and keep it aside for later.
02 - In a shallow bowl, beat together milk, eggs, and vanilla extract until it's fully combined.
03 - Spread around 2 tablespoons of the strawberry-cheesecake mix on a single slice of bread. Place another slice of bread on top to create a sandwich. Do this with the rest of the bread and filling.
04 - Quickly dunk each sandwich into the egg mix, making sure all sides are evenly soaked.
05 - Warm up some butter or oil in a frying pan on medium. Cook each sandwich until both sides turn golden, taking about 3 to 4 minutes per side.
06 - Serve while they're still warm, adding maple syrup, extra strawberries, and a sprinkle of powdered sugar if you want.
