Quick Cajun Pasta (Print)

Spicy sausage and peppers meet a creamy Cajun-flavored sauce made lighter with cream cheese. Ready fast for any busy evening.

# Ingredients:

01 - 1 lb (450 g) pork or beef sausages.
02 - 10.5 oz (300 g) pasta.
03 - 1 large shallot, minced.
04 - ½ cup (100 g) low-fat cream cheese.
05 - 2 tablespoons tomato paste.
06 - ½ tablespoon dried oregano.
07 - 1 pointed red pepper, chopped.
08 - Salt and black pepper, adjust as needed.
09 - 3 tablespoons Cajun seasoning.
10 - 1 tablespoon olive oil.
11 - ⅓ cup (30 g) grated Parmesan cheese.
12 - 2-3 tablespoons chopped fresh parsley.
13 - 2 large garlic cloves, minced.

# Steps:

01 - Boil your pasta in salted water and hold back 2 cups of the water when you drain.
02 - Brown the sausage for around 4-5 minutes, breaking it up as it cooks. Add in the shallot and red pepper, cooking until soft.
03 - Mix in the minced garlic, dried oregano, and Cajun spices. Cook that for about a minute.
04 - Stir in the tomato paste and 1 cup of the reserved pasta liquid. Add cream cheese and melt it into the sauce.
05 - Combine the pasta with the sauce, Parmesan, and parsley. Adjust seasoning before serving.

# Notes:

01 - Save some of the pasta water to make your sauce.
02 - Either pork or beef sausages work fine.
03 - Feel free to control the heat by using more or less Cajun spice.
