Peanut Butter Buckeyes (Print)

Decadent chocolate-covered peanut butter bites that are easy to make. These treats are perfect for special occasions or a quick indulgence.

# Ingredients:

01 - 3 cups powdered sugar.
02 - ½ cup of softened, unsalted butter.
03 - 1 cup of smooth peanut butter.
04 - 4 teaspoons of coconut oil (or use vegetable shortening).
05 - 3 cups of semi-sweet chocolate chips.
06 - ¼ teaspoon of vanilla.

# Steps:

01 - Using a big mixing bowl, combine the peanut butter, softened butter, and vanilla. Slowly stir in the powdered sugar until the mix turns into thick dough.
02 - Roll the dough into bite-sized balls and arrange them on a baking sheet lined with parchment paper. Stick a toothpick into each, then freeze for half an hour.
03 - Put the chocolate chips and coconut oil (or shortening) in a microwave-safe container. Heat in short bursts, stirring between, until the chocolate is fully melted and smooth.
04 - Take each frozen peanut butter ball and dip it into the melted chocolate, leaving a little peanut butter visible on top. Shake off any extra chocolate before placing back on the sheet.
05 - Pop the coated balls back in the freezer for about 15 minutes to set. If you'd like, smooth over the holes once you remove the toothpicks. Enjoy them whenever you want!
