Set your oven to heat at 300°F. Use foil or parchment paper to line a baking sheet so it collects the bacon drippings. Put a cooling rack over the lined pan.

Pour the red pepper flakes and brown sugar into bowls. Cut the strips of bacon into fourths so they’re the same size as the crackers.

Smear Boursin cheese over each cracker in an even layer, about ⅛-inch thick. Lay the crackers next to each other on the cooling rack you prepared.

Take the pieces of bacon and put one piece on every cracker. Sprinkle a good amount of brown sugar across the top, then add a dash of red pepper flakes on each.

Pop the crackers in the oven for 35-45 minutes, turning the pan around midway through. Start checking at the 30-minute mark. They're ready when the bacon looks cooked and the edges of the crackers start to brown.

You can serve these warm or let them cool to room temperature before eating.
