Blueberry Mousse Cheesecake (Print)

Creamy layers of cheesecake and blueberry mousse over a buttery graham cracker crust. Perfect for enjoying with friends or family.

# Ingredients:

01 - 1 1/2 cups of graham cracker crumbs, used for making the base.
02 - 1/4 cup white sugar, for sweetening the crust layer.
03 - 1/2 cup of melted unsalted butter, helps hold the crust together.
04 - 16 ounces of softened cream cheese, for the rich, creamy layer.
05 - 1/2 cup white sugar, mixed into the cheesecake layer for sweetness.
06 - Two eggs, create structure in the cheesecake.
07 - 1 teaspoon pure vanilla extract, adds flavor to the creamy layer.
08 - 2 cups fresh blueberries, used to prepare the mousse.
09 - 1/2 cup of sugar, gives sweetness to the berry mousse.
10 - 1 tablespoon lemon juice, for a citrusy kick in the mousse.
11 - One packet of unflavored gelatin, helps keep the mousse stable.
12 - Whip 2 cups of heavy cream, for a softer texture in the mousse.
13 - Extra fresh blueberries, perfect for decorating.
14 - Whipped cream, for decoration on top.
15 - Optional: Blueberry sauce, if you want extra topping.

# Steps:

01 - Set your oven to 325°F (165°C) and get a 9-inch springform pan ready by greasing it up. Mix crumbs, sugar, and butter until combined, then press into the pan. Bake for 10 minutes and allow it to cool fully.
02 - Beat cream cheese with sugar in a large bowl until it’s creamy. Mix in one egg at a time, blending after each. Stir in vanilla, then pour over the crust and bake 35-40 minutes. Let cool completely before the next step.
03 - Heat blueberries, lemon juice, and sugar in a pot over medium heat for around 10 minutes, stirring until the berries fall apart. Strain out the skins and let it cool down. Put gelatin over 1/4 cup of cold water for 5 minutes. Mix gelatin into the warm berry mix and let it cool, then gently fold in whipped cream. Spread this mousse on top of the cheesecake.
04 - Pop it in the fridge for no less than 4 hours, or even better, let it sit overnight for best results.
05 - Add fresh blueberries, whipped cream, or optional blueberry sauce before cutting and serving.
