Air Fryer Sweet Pineapple (Print Version)

# Ingredients:

→ Making the Pineapple

01 - Around 2 full cups of chopped pineapple pieces (that's about half of a small pineapple)
02 - 1 tablespoon melted vegan margarine or butter (optional)
03 - 2 tablespoons of maple syrup
04 - 1 teaspoon ground cinnamon

→ Chili Lime Dip (Optional)

05 - 3 tablespoons of vegan mayo or cashew cream
06 - Juice from half a lime (about 1 tablespoon)
07 - 1/2 teaspoon of chili powder

# Instructions:

01 - Remove the peel and core from the pineapple, then slice it into rings or cube-like chunks. Toss roughly 2 cups into a bowl.
02 - Mix together the melted margarine, maple syrup, and cinnamon in a small bowl, stirring gently. Pour this over the pineapple, coating it evenly.
03 - Arrange pineapple pieces so they’re sitting flat in the air fryer basket. Cook them at 380 degrees F for 12–15 minutes, flipping them halfway through, until they get golden and caramelized.
04 - While the pineapple is cooking, stir together the cashew cream or mayo, lime juice, and chili powder in a little bowl.
05 - Dig in while warm or chilled—great as a dessert or side! Use the chili lime dip on the side if you want.

# Notes:

01 - Lay pineapple pieces out one at a time in the basket to keep them intact.
02 - They’ll last in the fridge for 2 to 3 days.
03 - You can eat this dish either cold or warm.
