Crunchy Fish Sticks Air Fryer (Print Version)

# Ingredients:

→ Brine

01 - 6 to 8 cups chilled water
02 - 1/4 cup table salt

→ Fish and Coating

03 - 1 1/2 pounds of white fish like cod, haddock, tilapia, or halibut
04 - 2 tablespoons olive oil
05 - 2 cups of panko breadcrumbs
06 - 1/4 cup plain flour
07 - 2 large eggs

→ Seasonings

08 - 2 tablespoons dijon mustard
09 - 1/4 cup mayonnaise
10 - 1 tablespoon Old Bay spice mix
11 - 1/8 teaspoon ground black pepper
12 - 1/8 teaspoon salt

# Instructions:

01 - Stir salt into water in a large bowl. Soak fish for 15 minutes.
02 - Toss panko with olive oil and microwave for 2-4 minutes. Let it cool after it turns lightly golden.
03 - In a bowl, mix together the eggs, flour, mayonnaise, dijon mustard, Old Bay, salt, and pepper.
04 - Dip pieces of fish first in the egg batter, then into the panko. Shake off excess.
05 - Cook the fish at 400°F for about 10 to 12 minutes, flipping halfway through. Spray with oil if needed for extra crispness.

01 - Slice the fish into portions about 4 inches in length
02 - Cook in multiple batches to keep everything in a single layer
03 - Oil the air fryer basket so the fish won’t stick
