One Pot Veggie Mac (Print)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 4 cups water or vegetable broth
03 - Optional spices: Italian seasoning or paprika
04 - 2 cups elbow macaroni or your favorite pasta
05 - 1 cup of mixed veggies like spinach, bell peppers, or broccoli
06 - 2 cups shredded cheese (cheddar or vegan alternatives)
07 - 1 teaspoon garlic powder
08 - Salt and pepper for flavor

# Steps:

01 - Warm the olive oil in a big pot on medium heat. Toss in your vegetables and stir them around for 3-4 minutes until they feel a bit soft.
02 - Add the pasta and pour in the broth (or water). Let it come to a rolling boil.
03 - Lower the heat to a gentle simmer and cover the pot. Let it cook for 8-10 minutes, giving it a stir every now and then, until the pasta is tender and most of the liquid is gone.
04 - Take the pot off the heat and mix in the shredded cheese. Stir until it’s nice and creamy. If needed, add a splash of milk or extra cheese for a thicker texture.
05 - Sprinkle in salt, pepper, and any other spices you like. Stir it all together so the flavors are evenly mixed.
06 - Scoop the cheesy pasta into serving bowls. Enjoy it right away and add any extra toppings if you’d like.

01 - Feel free to swap in whatever veggies you’ve got in your fridge.
02 - To make it more filling, throw in tofu cubes, chickpeas, or plant-based meat.
