Warm the olive oil in a big pot on medium heat. Toss in your vegetables and stir them around for 3-4 minutes until they feel a bit soft.

Add the pasta and pour in the broth (or water). Let it come to a rolling boil.

Lower the heat to a gentle simmer and cover the pot. Let it cook for 8-10 minutes, giving it a stir every now and then, until the pasta is tender and most of the liquid is gone.

Take the pot off the heat and mix in the shredded cheese. Stir until it’s nice and creamy. If needed, add a splash of milk or extra cheese for a thicker texture.

Sprinkle in salt, pepper, and any other spices you like. Stir it all together so the flavors are evenly mixed.
