Slow Cooker Lentils (Print)

A cozy and nutritious lentil-packed soup, loaded with fresh veggies and simple spices. Perfect for the slow cooker.

# Ingredients:

01 - 1 teaspoon coriander.
02 - 2 cups of dried lentils.
03 - 1 large onion, chopped into small pieces.
04 - 14.5 ounces of diced tomatoes.
05 - 3 celery sticks, cut into thin slices.
06 - 6 cups of veggie broth.
07 - 3 carrots, cut into rounds.
08 - Salt and black pepper to taste.
09 - 4 cups of fresh spinach leaves.
10 - 3 garlic cloves, finely chopped.
11 - 1 teaspoon of smoky paprika.
12 - 1 teaspoon of ground cumin.
13 - Juice from 1 lemon.

# Steps:

01 - Wash the lentils well, then chop all the veggies.
02 - Toss everything into your crockpot, except for the spinach and lemon juice.
03 - Let it simmer on low for 6 to 8 hours, or go high for 3 to 4 hours.
04 - Blend half of the soup to make the texture smoother.
05 - Stir in the spinach until it wilts, then pour in the lemon juice. Serve warm!

01 - Make sure to rinse the lentils before using them.
02 - Feel free to adjust how much spice you want.
03 - This soup goes great with some crusty bread on the side.
