Tuscan Sausage Spinach Pasta (Print)

A delicious pasta featuring spinach, sausage, parmesan cream, and zesty sun-dried tomatoes for a perfect comforting meal.

# Ingredients:

→ Pasta

01 - 16 ounces of penne

→ Main Parts

02 - 1 pound of ground Italian sausage
03 - 4 minced garlic cloves
04 - Half a cup of chopped sun-dried tomatoes
05 - A couple handfuls of baby spinach (2 cups)

→ Sauce

06 - 2 tablespoons of olive oil
07 - 1 cup of chicken stock
08 - 2 cups heavy whipping cream
09 - 1 cup of freshly shredded Parmesan cheese

→ Spices

10 - A teaspoon of Italian dried herbs
11 - Half a teaspoon of red chili flakes
12 - Add salt and black pepper as needed

→ Extras

13 - Torn fresh basil leaves
14 - Extra Parmesan to sprinkle on top

# Steps:

01 - In a big pot, boil salted water and cook the penne until it’s just tender. Scoop out a cup of the cooking water before draining.
02 - Warm olive oil in a wide pan over medium heat. Toss in the sausage and cook until it’s golden brown, about 5-7 minutes. Set it aside on a plate.
03 - Turn heat down a bit, sauté garlic till it smells good. Mix in sun-dried tomatoes, chicken stock, cream, and spices. Let it bubble gently for about 3-5 minutes.
04 - Add Parmesan cheese, cooked sausage, and spinach to the pan. Stir until the spinach wilts, around 1-2 minutes. Taste and adjust salt and pepper.
05 - Pour the pasta into the sauce and stir to cover it all. Add some reserved pasta water if the sauce feels too thick.
06 - Sprinkle torn basil and extra Parmesan on top. Serve immediately while it’s hot.
