Warm up a big skillet over medium heat. Pour in olive oil, throw in the chopped onion and garlic, and cook for 3-4 minutes, stirring often until the onion turns see-through.

Add the ground turkey to the skillet. Break it into small pieces as it cooks for 5-7 minutes or until it browns. If there's any extra grease, drain it off.

Toss in the diced sweet potatoes, zucchini, smoked paprika, Italian seasoning, salt, and pepper. Let everything cook together for 5-7 minutes until the veggies begin to soften up.

Scoop the turkey and vegetable mix into the greased baking dish and smooth it out. Sprinkle the cheese all over the top.

Pop it in the heated oven and let it bake for 25-30 minutes. The cheese should be gooey and golden, and the sweet potatoes tender.
