# Ingredients:

01 - 2 medium zucchinis, chopped into small pieces
02 - 1 pound ground turkey
03 - 1 medium onion, chopped finely
04 - 2 medium sweet potatoes, peeled and cut into chunks
05 - 1 tablespoon olive oil
06 - 2 garlic cloves, chopped up small

07 - Salt and pepper as needed
08 - 1 teaspoon of Italian seasoning blend
09 - 1 teaspoon of smoked paprika

→ Topping

10 - 1 cup of shredded mozzarella or cheddar cheese
11 - Optional garnish: chopped fresh parsley

# Instructions:

01 - Heat your oven to 400°F (200°C) and rub some olive oil inside a large baking dish.
02 - Warm up a big skillet over medium heat. Pour in olive oil, throw in the chopped onion and garlic, and cook for 3-4 minutes, stirring often until the onion turns see-through.
03 - Add the ground turkey to the skillet. Break it into small pieces as it cooks for 5-7 minutes or until it browns. If there's any extra grease, drain it off.
04 - Toss in the diced sweet potatoes, zucchini, smoked paprika, Italian seasoning, salt, and pepper. Let everything cook together for 5-7 minutes until the veggies begin to soften up.
05 - Scoop the turkey and vegetable mix into the greased baking dish and smooth it out. Sprinkle the cheese all over the top.
06 - Pop it in the heated oven and let it bake for 25-30 minutes. The cheese should be gooey and golden, and the sweet potatoes tender.
07 - Take it out of the oven and let it sit for a few minutes to cool. If you'd like, sprinkle some parsley on top before enjoying.
