Spinach Artichoke Tortellini (Print)

Cheesy parmesan-pasta loaded with tender spinach and artichokes. Perfect for busy evenings but still feels indulgent.

# Ingredients:

01 - 1 cup shredded mozzarella.
02 - 1 cup grated parmesan.
03 - 4 cups whole milk.
04 - 1/4 cup all-purpose flour.
05 - 4 tablespoons salted butter.
06 - 4 minced garlic cloves.
07 - 14 ounces chopped artichoke hearts.
08 - 6 cups washed spinach leaves.
09 - 20 ounces of cheese-filled tortellini.

# Steps:

01 - Follow the directions on the tortellini package to cook it. Leave it to cool a bit.
02 - On medium heat, melt the butter and add minced garlic.
03 - Toss in flour, pepper, and a bit of salt. Stir constantly for a few minutes.
04 - Pour in the milk slowly, whisking as you go. Once thickened, mix in the cheeses.
05 - Toss tortellini, spinach, and artichoke hearts into the sauce. Adjust seasoning if needed.

# Notes:

01 - Thin the sauce with milk if it's overly thick.
02 - It's tastiest when eaten right away.
