Melt 2 tablespoons of butter in a large, non-stick skillet and fry the tilapia fillets for 3-4 minutes on each side, until cooked through. Season with salt and pepper, remove from the skillet, and set aside.

To the same skillet, add the remaining 1 tablespoon of butter and diced onion. Sauté for 5 minutes until translucent.

Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for an additional 5 minutes, stirring occasionally.

Stir in the heavy cream and grated Parmesan cheese. Turn off the heat, mix well, and taste to adjust salt if needed.

Return the cooked tilapia fillets to the skillet and cover them with the sauce. Garnish with chopped parsley and additional grated Parmesan cheese before serving.
