Tilapia in Roasted Pepper Sauce (Print)

# Ingredients:

01 - 1 lb tilapia fillets
02 - 3 tbsp butter
03 - 1 medium onion, diced
04 - 2 garlic cloves, minced
05 - 6 oz roasted peppers, chopped
06 - 6 oz roasted peppers, pureed
07 - ¾ cup heavy cream
08 - ½ cup grated Parmesan cheese
09 - Salt and pepper, to taste
10 - Chopped parsley, for garnish

# Steps:

01 - Melt 2 tablespoons of butter in a large, non-stick skillet and fry the tilapia fillets for 3-4 minutes on each side, until cooked through. Season with salt and pepper, remove from the skillet, and set aside.
02 - To the same skillet, add the remaining 1 tablespoon of butter and diced onion. Sauté for 5 minutes until translucent.
03 - Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for an additional 5 minutes, stirring occasionally.
04 - Stir in the heavy cream and grated Parmesan cheese. Turn off the heat, mix well, and taste to adjust salt if needed.
05 - Return the cooked tilapia fillets to the skillet and cover them with the sauce. Garnish with chopped parsley and additional grated Parmesan cheese before serving.

01 - Use fresh tilapia fillets for the best flavor. Adjust the seasoning to your liking and serve immediately with a side of vegetables or pasta.
