Quick Texas Dinner (Print Version)

# Ingredients:

01 - A couple of tablespoons of olive oil.
02 - One cup of finely chopped onion.
03 - One cup of chopped green bell pepper.
04 - A tablespoon of freshly minced garlic.
05 - A pound of 80/20 ground beef.
06 - Half a teaspoon of powdered mustard.
07 - Two teaspoons of chili powder.
08 - Two teaspoons of kosher salt.
09 - A quarter teaspoon of ground black pepper.
10 - Half a cup of plain white long-grain rice, uncooked.
11 - Two generous tablespoons of tomato paste.
12 - A 14.5-ounce can of diced tomatoes, with all its juices.
13 - One cup of water.
14 - One teaspoon of Worcestershire sauce.
15 - One cup of shredded cheddar cheese, if you want to add it.

# Instructions:

01 - In a skillet with a good lid, warm up the olive oil over medium-high heat.
02 - Mix onions, peppers, garlic, ground beef, and spices in the pan. Keep cooking until the beef isn't pink. Get rid of any extra grease.
03 - Toss the rice into the pan and stir it around for a couple of minutes so it soaks up the flavor.
04 - Add the tomato paste first and let it cook for a minute. Then pour in the diced tomatoes, water, and Worcestershire sauce.
05 - Put on the lid and let it simmer for about 20 minutes. Fluff it up and keep cooking if there's still too much liquid.
06 - If using cheese, sprinkle it on top during the last few minutes of cooking.

# Notes:

01 - You can tweak the heat level by adjusting the chili powder.
02 - Make sure to drain the grease from the beef before adding the rice.
03 - Adding cheese can give the dish some extra richness and flavor.
