Spicy Mango Wings (Print Version)

# Ingredients:

→ Sweet Heat Sauce

01 - 1 ripe mango, diced after peeling and removing the pit
02 - 3 habanero chilies, medium-sized
03 - 3 garlic cloves, chopped roughly
04 - 3 tablespoons fresh lime juice
05 - 2 tablespoons white vinegar
06 - 3 tablespoons real maple syrup
07 - 1 teaspoon salt
08 - 1/2 teaspoon smoked paprika

→ Crispy Chicken Wings

09 - 10 bone-in wings, separated into drumettes and flats
10 - 1/2 teaspoon ground black pepper
11 - 1 tablespoon baking powder (no aluminum)
12 - 1/2 teaspoon fine salt
13 - 1/2 teaspoon garlic powder
14 - 1/2 teaspoon paprika

# Instructions:

01 - Throw mango chunks, chilies, garlic, lime juice, vinegar, syrup, paprika, and salt into a blender or food processor. Blend it all down to a silky consistency.
02 - Mix baking powder with the rest of the dry spices in a bowl. After you've dried the wings, coat them in the seasoning blend by tossing them together.
03 - Heat oven to 425°F. Cover a baking tray with foil, layer on a wire rack, and lightly spray it to keep food from sticking.
04 - Lay wings skin-side facing up on the rack. Bake for 20 minutes, flip them over, then bake another 10 minutes. Keep going until they're 160°F inside.
05 - Let the wings sit for about 5 minutes. Toss them with about a third of the sauce in a big bowl. The rest of the sauce can be used when eating.

# Notes:

01 - To adjust the spice, include seeds from 1-3 habanero peppers.
02 - Feel free to make the sauce earlier and keep it in the fridge.
03 - Make sure frozen wings are totally thawed.
