Slice off the ends of the oranges. Score the peel from top to bottom, remove it in pieces, and slice into strips about 1/4 inch wide.

Bring the peels to a boil in fresh water, drain, and rinse. Do this twice, boiling 10 minutes each time.

Cook the peels in sugar syrup for 40-45 minutes. Keep going until they're see-through.

Drain well and place the peels on a rack for about 30 minutes to dry out.

Roll the peels around in the leftover sugar to coat them.

Leave the coated peels at room temperature for a full day to dry completely.
