Take the pineapple, remove the skin and core, then cut it into chunks or rings. Measure out 2 full cups and add to a bowl.

In a small bowl, mix maple syrup, cinnamon, and melted butter together. Coat pineapple pieces gently in the mixture.

Lay pineapple chunks in a single layer in your air fryer basket. Cook at 380°F for 12–15 minutes, flipping halfway through, until they're golden and caramelized.

While waiting, stir together vegan mayo or cashew cream, lime juice, and chili powder in a small bowl.

Eat it warm or cold as either a dessert or side. Pair it with the optional chili lime dip, if you'd like.
