Stuffed Chocolate Cookies (Print)

Soft, chewy cookies packed with a hidden peanut butter cup. They're the perfect crowd-pleaser for chocolate and peanut butter fans!

# Ingredients:

01 - 1/2 teaspoon salt.
02 - 1 teaspoon baking soda.
03 - 2 1/2 cups of plain flour.
04 - 1 cup of butter (unsalted and softened).
05 - 3/4 cup white sugar.
06 - 3/4 cup packed light brown sugar.
07 - 2 large eggs.
08 - 2 teaspoons vanilla essence.
09 - 1 1/2 cups of chocolate chips (semisweet).
10 - 12 mini peanut butter cups.

# Steps:

01 - Set your oven to 350°F (175°C) and place parchment paper on your baking tray.
02 - Combine salt, flour, and baking soda in a medium bowl. Give it a good stir and put it aside.
03 - Mix softened butter with both sugars in a big bowl until creamy and fluffy. Stir in eggs one by one, then pour in vanilla and mix again until smooth.
04 - Add the dry mix to the creamed mixture slowly, stirring just enough to blend everything together. Toss in the chocolate chips and fold them through.
05 - Scoop around 2 tablespoons of dough and shape it into a flat round. Pop a mini peanut butter cup in the middle, then cover it with another tablespoon of dough. Seal the dough around the candy snugly.
06 - Place the dough balls onto the baking tray, making sure to leave around 2 inches of space between them.
07 - Let them bake for 10-12 minutes until the edges turn a nice golden color. Cool them right on the tray for five minutes, then move them onto a rack to finish cooling.
