Citrus Swirl Cookies (Print)

Soft cookies combining lemon and strawberry swirls, made with cake mix for a simple and colorful treat.

# Ingredients:

01 - 1 box lemon-flavored cake mix
02 - 1 box strawberry-flavored cake mix
03 - 4 large eggs, split evenly between the two mixes
04 - ½ cup vegetable oil, divided into two equal parts
05 - 1 teaspoon vanilla extract, split for the two batches

06 - Dusting of powdered sugar

# Steps:

01 - Grab two big bowls and combine the lemon mix with 2 eggs, ¼ cup of oil, and ½ teaspoon of vanilla. Do the same for the strawberry mix in another bowl. Stir each one until the dough is smooth and silky.
02 - Scoop a small bit from both doughs and press them gently together to form a swirled ball. Roll lightly to mix without blending the colors too much.
03 - Set your oven to 350°F (175°C). Cover your baking sheets with parchment paper, and place the cookies on them about 2 inches apart.
04 - Pop them in the oven for 8-10 minutes. They should look set at the edges but still a bit soft in the middle since they'll firm up as they cool.
05 - Leave them on the baking sheet for 2 minutes, then move them to a wire rack to cool completely. If you'd like extra sweetness, sprinkle some powdered sugar on top once they're cool.

02 - You can prep the dough ahead of time and refrigerate it for up to 2 days.
03 - Avoid baking too long—pull them out when the centers are still slightly soft for the best texture.
