Grab two big bowls and combine the lemon mix with 2 eggs, ¼ cup of oil, and ½ teaspoon of vanilla. Do the same for the strawberry mix in another bowl. Stir each one until the dough is smooth and silky.

Scoop a small bit from both doughs and press them gently together to form a swirled ball. Roll lightly to mix without blending the colors too much.

Set your oven to 350°F (175°C). Cover your baking sheets with parchment paper, and place the cookies on them about 2 inches apart.

Pop them in the oven for 8-10 minutes. They should look set at the edges but still a bit soft in the middle since they'll firm up as they cool.

Leave them on the baking sheet for 2 minutes, then move them to a wire rack to cool completely. If you'd like extra sweetness, sprinkle some powdered sugar on top once they're cool.
