Strawberry Rice Krispie (Print Version)

# Ingredients:

01 - 1 tsp vanilla extract (4g).
02 - 1 cup mini marshmallows (optional).
03 - 6 cups puffed rice cereal (160g).
04 - ½ cup unsalted butter (113g).
05 - 1 tsp lime juice (4g).
06 - 1 (3oz) package strawberry gelatin (strawberry Jello).
07 - 1 (10oz) bag regular or mini marshmallows (285g).

# Instructions:

01 - Line an 8-inch square dish with parchment and grease it well.
02 - On medium heat, let ½ cup butter melt in a big pot.
03 - Keep the heat low. Stir 10 oz of marshmallows into the melted butter until it's silky and creamy.
04 - Sprinkle 3 oz of strawberry gelatin in and stir until it's mixed in completely.
05 - Pour 1 tsp each of lime juice and vanilla extract into the mixture and give it a few stirs.
06 - Take the pot off the burner. Gently mix in 6 cups of puffed rice cereal a little at a time, making sure it’s all coated.
07 - If you'd like, toss in 1 cup of mini marshmallows for a fun texture boost.
08 - Spread the mixture evenly in the prepared pan using a rubber spatula to flatten it out.
09 - If you want some extra sweetness, drizzle melted white chocolate ganache over the top.
10 - Wait 15 minutes for it to cool down, then slice it into squares and dig in!
