Line an 8-inch square dish with parchment and grease it well.

On medium heat, let ½ cup butter melt in a big pot.

Keep the heat low. Stir 10 oz of marshmallows into the melted butter until it's silky and creamy.

Sprinkle 3 oz of strawberry gelatin in and stir until it's mixed in completely.

Pour 1 tsp each of lime juice and vanilla extract into the mixture and give it a few stirs.

Take the pot off the burner. Gently mix in 6 cups of puffed rice cereal a little at a time, making sure it’s all coated.

If you'd like, toss in 1 cup of mini marshmallows for a fun texture boost.

Spread the mixture evenly in the prepared pan using a rubber spatula to flatten it out.

If you want some extra sweetness, drizzle melted white chocolate ganache over the top.
