Indian Spiced Rice Bowls (Print)

Delicious griddle-style rice with garam masala meat, crunchy veggies, and zesty creamy sauce—all in 20 minutes.

# Ingredients:

→ Main Components

01 - 4 cups cooked Jasmine or basmati rice
02 - 1 pound minced chicken or lamb

→ Herbs & Veggies

03 - 1/2 cup chopped up fresh cilantro
04 - 1/2 cup grated carrots
05 - 1 onion, finely diced

→ Spices, Sauces & Oils

06 - 1 1/2 tablespoons garam masala
07 - 1 tablespoon minced or pasted garlic
08 - 1/2 cup sweet mango chutney
09 - 2-3 tablespoons coconut oil or vegetable oil
10 - A splash of soy sauce (around 1/4 cup)
11 - 1 tablespoon minced or pasted ginger
12 - 3/4 cup real mayo
13 - Hot sauce of your choice, adjust the heat to your liking

# Steps:

01 - Set aside the mayo, 1/2 tablespoon garam masala, rice, and hot sauce. Line up the other items on a tray. Heat your griddle to medium.
02 - Drizzle oil on the griddle. Toss in the meat, onions, and carrots. Break the meat apart and stir as it browns for 4-5 minutes.
03 - Stir in the cilantro, soy sauce, mango chutney, ginger, garlic, and 1 tablespoon garam masala. Cook everything for about 4 or 5 minutes more.
04 - In a bowl, stir together the mayo, rest of the garam masala, and however much hot sauce you want.
05 - Lay down a base of rice in your bowls. Spoon on the cooked mixture. Finish with a drizzle of sauce.

# Notes:

01 - Want a true Indian vibe? Use coconut oil instead of veggie oil.
