Sausage Rice Skillet (Print)

An easy meal made in one pan with smoked sausage, fresh bell peppers, and rice. Toss it all together in a zesty tomato sauce for a hearty dinner in 30 minutes.

# Ingredients:

01 - 1/4 cup + 1 cup uncooked white rice
02 - 2 teaspoons olive oil
03 - 12 ounces smoked sausage, cut into slices
04 - Half a yellow bell pepper, sliced thin
05 - Half a red bell pepper, sliced thin
06 - 1 small white onion, sliced and quartered
07 - 4 garlic cloves, minced fine
08 - 1/2 teaspoon fine sea salt
09 - 1/2 teaspoon black pepper, freshly ground
10 - 5 tablespoons tomato paste
11 - 1 1/4 cups of chicken stock, low-sodium (split)
12 - 1 teaspoon ground paprika
13 - 1/8 teaspoon cayenne powder
14 - 1 1/2 tablespoons chopped fresh parsley (to sprinkle on top)

# Steps:

01 - Follow the cooking steps on your rice package. Once done, put it off to the side while the rest is being cooked.
02 - Warm up your cast iron skillet over medium heat, then pour in the oil. Add the sausage slices once the oil is hot, cooking for around 5 minutes while turning halfway. Take the sausage out when browned and set it aside.
03 - Using the same skillet (don’t wash away the sausage bits), toss in the onion and peppers. Let them soften for 4 or 5 minutes, then stir in salt, pepper, and garlic. Cook a quick minute longer and set it all aside along with the sausage.
04 - Lower the heat to medium, then add tomato paste and 3/4 cup of the chicken stock. Whisk until smooth. Let it simmer for about a minute, then mix in the cayenne and paprika for that extra kick.
05 - Bring back the sausage, sautéed onion and peppers, rice, and the remaining broth. Stir everything in the skillet until it’s warmed through and fully mixed.
06 - Finish it off with parsley on top. Serve straight from the skillet while it’s hot and tasty!

# Notes:

01 - Want it spicier? Toss in more cayenne or some red chili flakes.
02 - Switch it up with different sausages like chorizo, turkey, or andouille.
03 - Cheese fan? Stir in some shredded Parmesan or cheddar before serving.
04 - Got extra veggies? Mushrooms, spinach, or zucchini would be awesome in this!
