Banana Pancakes for One (Print Version)

# Ingredients:

01 - 1 banana that's ripe and ready to mash.
02 - 1 whole egg.
03 - 2 tablespoons of buttermilk.
04 - A tablespoon of olive oil.
05 - 2 teaspoons of brown sugar.
06 - 1/3 cup plus 2 extra tablespoons of all-purpose flour.
07 - 1 teaspoon of baking powder.
08 - 1/8 teaspoon of baking soda.
09 - A small pinch of salt.

# Instructions:

01 - Smash up the banana in a bowl. Stir in the egg, buttermilk, olive oil, and brown sugar till blended together.
02 - Toss in the flour, baking soda, baking powder, and salt. Keep whisking until there are no lumps.
03 - Warm up a pan over medium heat, then lower the heat a little. Spread some grease or oil on it.
04 - Pour about 1/3 cup of batter for each pancake. Wait for bubbles to pop on the surface, flip them over, and cook the other side.

01 - A gluten-free flour alternative works too.
02 - Mix in add-ins like chocolate chips, fruits, or nuts.
