Tasty One-Pan Fajitas (Print Version)

# Ingredients:

→ Spice Mix

01 - A little salt and some black pepper as needed
02 - 1 teaspoon smoked paprika
03 - 2 teaspoons ground coriander
04 - 2 teaspoons chili powder
05 - 2 teaspoons dried oregano

→ Main Ingredients

06 - 1 red bell pepper, sliced into strips
07 - 1 yellow bell pepper, sliced into strips
08 - 1 orange bell pepper, sliced into strips
09 - 1 and a half pounds of chicken breast, cut into strips
10 - 1 red onion, cut into wedges
11 - 3 tablespoons olive oil
12 - 3 minced garlic cloves

→ For Serving

13 - A handful of fresh cilantro, chopped
14 - 2 tablespoons lime juice, freshly squeezed
15 - 6 warm tortillas (corn or flour, 8-inch)

# Instructions:

01 - Set your oven to 425°F (220°C). Use a little oil or spray to coat your baking sheet.
02 - Stir together the chili powder, cumin, oregano, smoked paprika, plus about 1¼ teaspoons of salt and pepper in a small dish.
03 - Lay out the chicken, veggies, and garlic on your baking sheet. Drizzle all over with the olive oil, then scatter your spice blend on top. Toss it well to coat everything nicely.
04 - Put your baking sheet in the oven for 25 minutes. Make sure the chicken is cooked through and the veggies soften just enough.
05 - Bring the dish out of the oven. Mix in some chopped cilantro and lime juice while it’s hot. Serve right away with tortillas.

01 - Cut and prep the veggies and chicken up to 24 hours in advance, if you want
02 - Keep leftovers in the fridge, good for about 3 days
