01 - 1 pound of smoked sausage, cut into slices.
02 - 4 russet potatoes, chopped into cubes.
03 - 1 small onion, diced into small pieces.
04 - 1 red bell pepper, diced.
05 - 2 garlic cloves, finely chopped.
06 - 2 tablespoons of olive oil.
07 - 1 teaspoon of smoked paprika.
08 - Half a teaspoon of garlic powder.
09 - Salt and pepper as needed.
10 - 2 tablespoons chopped fresh parsley (for garnish).
11 - Optional: a sprinkle of shredded cheddar cheese or a drizzle of hot sauce when serving.

# Steps:

01 - Drizzle a tablespoon of olive oil into a big skillet and warm it over medium heat. Toss in the chopped potatoes, then season them with garlic powder, smoked paprika, salt, and pepper.
