Rolo Cinnamon Caramel Cookies (Print)

Soft cookies layered with caramel and chocolate, coated in cinnamon sugar for a sweet chewy treat.

# Ingredients:

→ Dough Ingredients

01 - 1 box white cake mix
02 - 1 large egg
03 - 8 tablespoons unsalted butter, softened
04 - 4 ounces cream cheese, softened

→ Fillings and Coatings

05 - 24 Rolo candies, wrappers removed
06 - 3-4 tablespoons cinnamon sugar

# Steps:

01 - Beat together the cake mix, egg, butter, and cream cheese until a soft dough forms. Refrigerate the dough for at least 60 minutes.
02 - Preheat the oven to 350 degrees Fahrenheit. Set out a cookie sheet.
03 - Scoop out and roll the dough into 24 even balls. Press each ball flat and place a Rolo candy in the center.
04 - Form the dough around the candy to enclose it completely and roll into a ball again. Roll the dough balls in cinnamon sugar and place them on the cookie sheet.
05 - Bake for 10 minutes. Remove from the oven and let cookies cool on the baking sheet for 2 minutes before transferring to a piece of parchment paper.
06 - Gently tap the tops of the cookies using the back of a flat spatula, if desired. Let cookies cool completely before storing in a sealed container at room temperature.
