Radish Top Blend (Print Version)

# Ingredients:

01 - 4 cups of radish greens, tightly packed, cleaned up, and dried completely.
02 - 4 garlic cloves, chopped finely.
03 - Juice from half a large lemon, about 2 tablespoons.
04 - 1/2 cup of nuts (pine nuts, almonds, pistachios, or macadamia) sliced or slivered.
05 - 1/2 cup of Parmesan cheese, freshly grated.
06 - 1/3 cup of high-quality extra-virgin olive oil and a little more if needed.
07 - Salt and a few cracks of black pepper, adjusted to your taste.

# Instructions:

01 - Toss the first six ingredients into a food processor. If it's too crowded, just split it into smaller batches.
02 - Keep blending everything until it's silky. Be sure to scrape down the sides when needed.
03 - Pour in the oil little by little until you like how it spreads. Add a pinch of salt and pepper to get the flavor just right.

# Notes:

01 - Yields around 2 cups.
02 - Swap the nuts for sunflower seeds or pepitas if you want a recipe free of nuts.
03 - Can't do cheese? Nutritional yeast will do the trick instead of Parmesan.
04 - Put it in the freezer and it'll stay good for up to 6 months.
