Pumpkin S'mores Cookies (Print)

# Ingredients:

01 - 1/2 cup pumpkin puree.
02 - 1 teaspoon vanilla extract.
03 - 1 cup chocolate chips.
04 - 1 cup marshmallows, mini size.
05 - 1/4 cup white sugar.
06 - 8 graham crackers, broken into bits.
07 - 1 cup softened unsalted butter.
08 - 1 teaspoon baking soda.
09 - 1 large egg.
10 - 3/4 cup tightly packed brown sugar.
11 - 2 1/4 cups plain flour.
12 - 1 teaspoon pumpkin spice mix.
13 - 1/2 teaspoon table salt.

# Steps:

01 - Set your oven to 350°F (175°C) and get a baking tray ready with parchment paper.
02 - Mix the butter, brown sugar, and white sugar in a big bowl until it turns soft and fluffy.
03 - Stir in the pumpkin puree, vanilla, and egg to combine everything nicely.
04 - In a smaller bowl, mix together flour, pumpkin spice, baking soda, and salt. Slowly add it to the wet mixture and stir just until it all comes together.
05 - Carefully stir in chocolate chips, marshmallows, and graham cracker pieces until evenly spread out.
06 - Use a spoon or scoop to drop dough balls on the tray. Add extra marshmallows or chocolate chips on top if you’d like!
07 - Bake for around 12-14 minutes, or until the edges start turning a light golden brown. Let them cool off on the tray before transferring them to a rack.
