Set your oven to 350°F (175°C) and get a baking tray ready with parchment paper.

Mix the butter, brown sugar, and white sugar in a big bowl until it turns soft and fluffy.

Stir in the pumpkin puree, vanilla, and egg to combine everything nicely.

In a smaller bowl, mix together flour, pumpkin spice, baking soda, and salt. Slowly add it to the wet mixture and stir just until it all comes together.

Carefully stir in chocolate chips, marshmallows, and graham cracker pieces until evenly spread out.

Use a spoon or scoop to drop dough balls on the tray. Add extra marshmallows or chocolate chips on top if you’d like!

Bake for around 12-14 minutes, or until the edges start turning a light golden brown. Let them cool off on the tray before transferring them to a rack.
