Pecan Pie Cake (Print)

A chewy snack cake loaded with toasted pecans and sweet brown sugar. Brings the essence of pecan pie to every bite!

# Ingredients:

01 - 1 1/4 cups plain flour
02 - 3/4 cup cooking oil
03 - 2 cups chopped pecans
04 - 4 eggs
05 - 1 tablespoon vanilla
06 - 1 scant teaspoon fine salt
07 - 2 cups tightly packed brown sugar
08 - Optional: powdered sugar for dusting

# Steps:

01 - Set your oven to 350°F and butter up a 13x9 pan.
02 - Whisk together eggs, vanilla, and sugar for a couple minutes 'til it's foamy. Blend in the oil and salt, then slowly mix in the flour.
03 - Stir in the pecans gently, then pour the mix into that greased pan.
04 - Pop it in the oven for 30-40 minutes. Wait until the edges are golden, and the middle's no longer wobbly.
05 - Leave it to cool in the pan, slice up 24 pieces, and sprinkle powdered sugar on top if you'd like.

# Notes:

01 - You can swap out pecans for walnuts or almonds.
02 - Use either dark or light brown sugar, both work great.
03 - Try baking this in a bundt pan for a fun twist!
